Chocolate Apple Steaks

Chocolate Apple Steaks

Ingredients:
1 can applesauce
1 cup cocoa powder
3 cloves minced garlic
3 tbl fresh ground black pepper
2 tbl soy sauce
2 tbl hot sauce

Directions: 
Mix the applesauce, apple juice, cocoa, garlic,
pepper, soy sauce and hot sauce in a blender or
with your mixer until well blended.  Marinate
steaks for at least 1 hour, longer is better if
time permits.  Removed Steaks from marinade and
cook.  Discard remaining marinade.  Best cooked
over hot coals to rare or medium.

Buffalo-Garlic Marinade & Dipping Sauce

Serves 4

Buffalo-Garlic Marinade & Dipping Sauce

Ingredients:
1c steak sauce
1/2 c cayenne pepper sauce (such as Frank’s}
1/2 c dry red wine
1/4 c olive oil
4 cloves garlic, pressed
1 1/2 tsp fresh groung black pepper
4 one pound boneless steaks about 1″ thick (such as tenderloin, sirloin or flank)

Directions:
Blend all ingredients except for steaks thoroughly in a medium bowl. Place steaks into
a large zippered plastic bag and add marinade. Coat steaks with marinade and refrigerated
for several hours or overnight turning several times. Remove steaks from bag and grill as
desired.  Place marinade into a medium saucepan and bring to a full rolling boil over high
heat, boil for 2 minutes.  Remove from heat and use a dipping sauce for the grilled steaks

Smokey Mango-Mustard Barbecue Sauce

Smokey Mango-Mustard Barbecue Sauce

Ingredients:
1 tablespoon salted butter
1 slice bacon, minced
1 medium onion, diced
1 large jalapeno pepper, finely chopped (leave in seeds for hotter sauce)
2/3 cup gainy mustard
1 cup mango chutney
1/2 cup white wine vinegar
1/4 cup brewed coffee
Coarse salt to taste
Freshly ground black pepper to taste

Directions:
Melt butter in medium size, heavy skillet over medium heat.  Add bacon and cook, stirring often, until fat starts to render (about 3 minutes). Add onion and jalapeno.  Cook until bacon is crisp and onion is soft and translucent (3-5 minutes).  Stir in mustard, chutney, vinegar and coffee.  Simmer, uncovered, until sauce is thick and rich (6-10 minutes).  Season with salt and pepper.  Serves 4-6.
